Angelfish with a mint mayonnaise



 
 

Ingredients

 
  • 1
    cooked, skinless angelfish fillet deboned
  • 1
    handful
    chopped red onion
  • 3
    sprig
    mint leaves, torn
  • 2
    tbsp
    mayonnaise
  • 1
    tsp
    crushed garlic
  • 2
    pinch
    dried basil
  • salt and pepper
  • 1
    handful
    rocket
  • 1
    handful
    sliced mini italian tomatoes
  • 2
    pieces lightly toasted bruschetta
  • 1
    tsp
    olive oil
  • 1
    pinch
    crushed garlic
  • balsamic glaze

Method

 
1. Mash the fish, onion, mint, mayonnaise, garlic, basil and salt and pepper to taste together. 2. Lightly spread the bruschetta with the olive oil and garlic. Arrange the fish mixture on top of the bruschetta and garnish with the tomatoes and rocket. 3. Drizzle with balsamic glaze and serve.
