250.00 g carrots — peeled, grated
50.00 g apples — chopped
200.00 g cake flour
10.00 ml cinnamon
10.00 ml koeksoda
5.00 ml sout
25.00 fresh lavender
20.00 g coconut
100.00 g pekanneute, gekap
5.00 ml vanilla — esesence
Versiersel
12.00 fresh lavender
10.00 ml lemon juice
50.00 g butter
500.00 g icing sugar
5.00 ml vanilla — esesence
200.00 g cheese — room temperature
10.00 pekanneute, fyngekap, vir versiering — afrikaans
6.00 fresh lavender — flowers

Method:

1. Klop die eiers, voeg die suiker
geleidelik by en klop tot romerig. Voeg
die olie by en klop goed. Roer die
gerasperde wortel en appel by.
2. Sif die meel, kaneel, koeksoda en sout
saam. Vou dit by die eiermengsel in.
3. Maak die laventel in ‘n voedsel-verwerker fyn. Voeg die laventel,
klapper, pekanneute en vanieljegeursel
by die mengsel en meng liggies.
4. Skep die mengsel in gesmeerde Prestige muffinpanne tot driekwart vol. Bak in voorverhitte oond vir 25 tot 30 minute of tot ‘n toetspen skoon uitkom. Laat afkoel.
5. Versiersel: Meng laventel en suurlemoensap en verhit vir 20 sekondes
in die mikrogolfoond. Laat afkoel. Klop
die botter, voeg die versiersuiker en
vanieljegeursel by en meng goed. Gooi
die laventelmengsel deur ‘n sif en hou
die sap. Voeg die sap by die versiersel en
vou die roomkaas daarby in.
6. Smeer die versiersel oor die koekies
en versier met gekapte neute en laventelblomme.
