Ingredients (16)

1.00 chicken breast fillets
salt and freshly ground black pepper
creole spice
2.00 bread — wholewheat, sliced
lettuce — shredded
mayonnaise
tomatoes — sliced
creole spice
5.00 ml cayenne pepper
5.00 ml white pepper
5.00 ml freshly ground black pepper
5.00 ml dried thyme
5.00 ml dried oregano
5.00 ml brown sugar
15.00 ml paprika
15.00 ml garlic — cloves, crushed

Method:

Place the chicken fillet between two layers of plastic wrap and flatten with the palm of your hand or with a meat mallet until about 2 mm thick.
Season lightly with salt, pepper and spice generously on both sides with the spice mixture.
Heat a ridged cast-iron pan until very hot, add 15 ml oil and heat until smoking. Grill the chicken fillet for about one minute on each side until charred.
Meanwhile, place two slices of bread on a plate. Moisten the lettuce with mayonnaise, place on top of the bread and top with a few tomato slices. Place the chicken fillet on top and serve immediately.
