Whiskey peri-peri sorbet

Ingredients

  • 500
    g
    white sugar
  • 1.50
    Litres
    water
  • 45
    ml
    lemon juice
  • 150
    ml
    150
  • 15
    ml
    sweet peri-peri sauce, strained through a fine sieve
  • 2
    egg whites
 

Method

Boil water and sugar in a large pot for 5 minutes until sugar dissolves.
Add lemon juice and peri-peri sauce.
Cool to room temperature.
Whisk egg whites to soft peaks and fold into the syrup.
Churn in an ice-cream machine until set.
