Watermelon and goat’s cheese parcels

310.00 g jam — watermelon
100.00 g goat's milk cheese
2.00 phyllo pastry
1.00 olive oil — spray

Method:

Preheat oven to 200°C. Drain and chop the konfyt into small pieces, and drain in a colander. (Too much syrup will soften the pastry.) Toss with the olive oil and goat’s cheese (crumbled), and season.

Halve two sheets of pastry vertically and again horizontally, to create 8 smallish rectangles. Stick 2 sheets of pastry together by spraying each side with olive oil spray. Place a dollop of the mixture in the centre of the pastry and fold or twist to make a parcel.

Cover tops in foil, shiny side out, to prevent burning, and bake for 15-20 minutes, or until golden and crisp.
