    butter

    olive oil

    leeks, cleaned and thinly sliced
  • 1
    large onion, chopped
  • 4
    large potatoes, chopped
  • 2
    Litres
    chicken stock
  • salt and milled black pepper
  • 375
    ml
    cream
  • heart-shaped croûtons
  • snipped chives to garnish
 

Method

 
Heat butter and oil in a large saucepan over low heat. Add leeks and onion and simmer for 10 minutes, stirring occasionally. Add potatoes and cook for 5 minutes. Pour in chicken stock and simmer until potatoes are tender. Season, cool and purée. Chill well. Serve with a dollop of cream, croûtons and snipped chives.
