Ingredients (8)

1.00 cauliflower — florets
300.00 g green beans — thicky sliced
3.00 carrots — peeled and sliced
1.00 cabbage — small, shredded
1.00 spinach — shredded
200.00 g mixed bean sprouts
6.00 eggs — hard-boiled, quartered

Method:

1. Bring a saucepan of water to the boil. Add cauliflower, beans and carrots and boil for one minute. Remove vegetables and place in a bowl of cold water. Add cabbage, spinach and bean sprouts to boiling
water and boil for 30 seconds, then remove and place in cold water.
2. Arrange drained vegetables and quartered eggs on a serving platter. Serve with peanut sauce.
