Vegetable platter with green dressing

  • 1
    cauliflower, broken into florets
  • 1
    bunch radishes
  • 2
    stalks celery, cut into julienne strips
  • few carrots, scraped clean and cut into julienne strips
  • 1
    cucumber, sliced
  • 12
    cherry tomatoes
  • 10
    fresh mushrooms, halved and rinsed in lemon water
  • 3
    large spinach leaves, hard stems removed
  • 1
    hard-;boiled egg
  • 6
    anchovy fish fillets
  • 100
    olive oil
  • 30
    white wine vinegar
  • salt and freshly ground black pepper


Arrange the vegetables on a platter. Boil the spinach for the salad dressing in a little water until tender. Drain well.
Cool and mix with the remaining dressing ingredients in a food processor, processing until smooth and well blended. Chill until needed.
Serve with the vegetables.
