1.00 onion — finely sliced
1.00 leeks — finely sliced
1.00 courgettes — thinly sliced
25.00 ml fresh chillies — 573
5.00 ml dried basil — or fresh, chopped
250.00 ml oats
250.00 ml oats
250.00 ml water
30.00 ml fresh chillies — 573
1.00 eggs
5.00 ml salt

Method:

Mix the sliced onion, leek and courgette with the olive oil and basil and leave for half an hour. Mix the remaining ingredients and add the vegetables. Mix well and drop spoonfuls of the batter into a heated heavy-based pan. Fry until lightly brown on one side, turn and bake on the other side until brown.
Makes 16 cookies.
