Vanilla fingers

  • 200
    soft butter
  • 50
    icing sugar
  • 250
    cake flour
  • 2
    vanilla essence
  • 50
    white chocolate (you may need more)


1. Beat the butter and the sugar together, sift in the flour, add vanilla essence and knead to form a smooth dough. 2. Spoon mixture into a large piping bag fitted with an open star tube. Pipe fingers of about 7,5 cm onto greased baking sheets, leaving spaces between them. Chill for 30 minutes. 3. Preheat oven and bake at 190 ºC for 8 to 10 minutes until golden brown. Leave to cool for 5 minutes and transfer to a cooling rack. 4. When cold, sandwich together with melted white chocolate.
