Tuna salad in a roll

    large French loaf
  • 60
    oil-free salad dressing
  • 125
    green beans, trimmed
  • 1
    green pepper, seeded and cut into thin strips

    tuna chunks in spring water, drained
  • 50
    pitted black olives

    cos or iceberg lettuce, broken into leaves

    cucumber, diced
  • 125
    cherry tomatoes, halved

    small red onion, thinly sliced

Cut the loaf into 3 horizontally and brush with a little dressing. Cook the beans in a little boiling water for 3 minutes, drain and dry. Mix the beans with the green pepper, tuna, olives and the rest of the dressing. Arrange lettuce, cucumber, tomatoes and onion on 1 slice of bread. Cover with the middle slice. Spoon tuna mixture on to this slice. Put final bread layer on top and secure with small skewers, or toothpicks. Cut into 4 pieces and serve. Serves 4.
