Tuna balls

  • 200
    tuna, drained
  • 375
    fresh breadcrumbs
  • 100
  • 25
    fresh parsley
  • 1
    white onion, chopped
  • salt and freshly ground black pepper
  • 1
    extra-large egg
  • 250
    fresh breadcrumbs for rolling in
  • oil


Preheat the oven to 180 ºC (350 ºF). Spray a baking sheet with non-stick spray or grease well. Place all the ingredients, except the breadcrumbs and oil, in a food processor. Process until a thick paste is formed. Sprinkle the breadcrumbs on a plate. Drop teaspoonfuls of the tuna mixture onto the plate. Roll the balls until they are completely covered with crumbs. Place the balls on the prepared baking sheet. Chill for a few minutes. Sprinkle with oil and bake for 40 minutes or until golden brown. Makes 21 balls.
