Tomato feta tartlets

    egg, whisked

    cherry tomatoes
  • 32
    cubes feta cheese
  • 1
    large avocado, peeled, stoned and cubed

Rub the butter into the flour. Add the egg and a little water if necessary to form a soft dough. Allow to rest for 15 minutes before lining four tartlet tins, about 10 cm in diameter. Preheat the oven to 210 ºC and bake for 8-10 minutes until cooked and a straw colour. Stir-fry the tomatoes for about half a minute in a hot pan. Remove from the pan. Remove the pastry cases from the tartlet tins and place on a plate. Fill each pastry case with 8 cherry tomatoes, 8 cubes of feta and avocado. Season with salt and ground black pepper. Serves 4.
