Tofu with Mediterranean vegetables

Ingredients (11)

500.00 g tofu — smoked
oil — for frying
1.00 onion — large, halved ans sliced
4.00 garlic — cloves, crushed
1.00 red chilli — deseeded and chopped
180.00 g aubergine — peeled, chopped
10.00 ml capers
1.00 red pepper — strips
1.00 yellow pepper — strips
250.00 ml wine — dry white
sea salt and freshly ground black pepper

Method:

1. In a medium saucepan heat oil, then fry onion and garlic until transparent. Add remaining ingredients, cover and simmer for 5 to 7 minutes. Uncover and simmer until vegetables are tender.
2. In a separate frying pan, heat oil and fry tofu on both sides. Remove and place on the vegetables, mixing lightly.
3. Cover and simmer gently for 20 minutes until cooked. Serve on brown rice.
