Tofu with Mediterranean vegetables

  • 500
    smoked tofu
  • oil for frying
  • 1
    large onion, halved and sliced
  • 4
    cloves garlic, crushed
  • 1
    red chilli, deseeded and chopped
  • 180
    aubergines, peeled and chopped
  • 10

    red pepper, deseeded and cut into strips
  • 1
    yellow pepper, deseeded and cut into strips
  • 250
    dry white wine
  • salt and freshly ground black pepper


1. In a medium saucepan heat oil, then fry onion and garlic until transparent. Add remaining ingredients, cover and simmer for 5 to 7 minutes. Uncover and simmer until vegetables are tender. 2. In a separate frying pan, heat oil and fry tofu on both sides. Remove and place on the vegetables, mixing lightly. 3. Cover and simmer gently for 20 minutes until cooked. Serve on brown rice.
