Toast with button mushrooms

    garlic clove, crushed
  • 500
    baby button mushrooms
  • 20
    port or sherry
  • extra butter
  • 6
    thick slices white bread
  • salt and freshly ground black pepper
  • 10
    chopped fresh parsley


Heat the butter in a pan until very hot.
Add the garlic and stir-fry for one minute.
Add the mushrooms and stir-fry for three to four minutes.
Season well with salt and pepper and add the port or sherry.
Bring to the boil and cook until all the liquid has evaporated.
Remove from the heat and keep warm.
Butter the slices of bread on both sides and fry in the same pan until golden brown and crisp.
Spoon the mushrooms on top of the bread and sprinkle with parsley. Serve immediately.
