  • 3
    egg yolks
  • 100
    icing sugar
  • 7
    vanilla essence
  • 250
    mascarpone cheese
  • 1
    extra-large egg
  • 100
    strong cold coffee
  • 30
    brandy or coffee liqueur
  • 20
    finger biscuits (you may not need them all)
  • cocoa for dusting


Butter a 20 cm square dish (or use a loaf pan).
Beat the egg yolk, icing sugar and vanilla essence together until thick and light.
Add the mascarpone cheese and mix well.
Beat the egg white until stiff peaks form and fold into the mixture.
Mix the coffee and liqueur and dip the biscuits in the mixture.
Arrange the biscuits in a single layer in the dish.
Spread half the mascarpone mixture on top and repeat with the remaining biscuits and mascarpone mixture.
Dust with cocoa and chill for at least 3 hours before serving.
