Three-cheese tart with grilled onion topping

    baked shortcrust pastry tart case
  • 100
    blue cheese, mashed
  • 85
    fromage frais or smooth cottage cheese
  • 85
    mascarpone cheese
  • milled pepper
  • 6
    red (Spanish) onions, sliced
  • olive oil
  • fresh thyme


Place baked shortcrust pastry case on a serving dish and set aside. FILLING: Mash cheeses and seasoning together well. Spoon carefully into pastry case and spread out evenly. Chill. TOPPING: Brush onion slices with oil and grill until softened but still firm and not burnt (singed edges are fine). Cool. Arrange on top of cheese mixture in pastry case. Sprinkle with fresh thyme and serve at room temperature.
