Thai-style red beef curry

  • 500
    beef strips
  • 30
    red curry paste
  • 250
  • 100
    desiccated coconut
  • oil for frying
  • 1
    onion, diced
  • 2
    cloves garlic, crushed or very finely chopped
  • salt
  • 1
    bunch fresh coriander, chopped


Mix beef and curry paste in a small bowl and toss to coat. Set aside. Gently heat cream and add coconut. Simmer for about 5 minutes, remove from stove and set aside. Heat oil in a pan and gently sauté onion and garlic. Add beef and stir-fry for about 1 minute. Add coconut and cream, stir to mix well and cook for about 5 minutes. Season lightly with salt. Stir in coriander, reserving a few whole leaves for garnish. Serve with rice or noodles.
