Thai dressing for vegetables

  • 2
    cloves garlic
  • 2
    kaffir lime leaves
  • 1
    red chilli
  • 45
    oyster sauce
  • 30
    olive oil
  • peanuts
  • 400
    green beans


Heat oil in a small saucepan. Add garlic, lime leaves and chilli and heat for 30 seconds. Remove from the heat.
Mix half the oyster sauce with 45ml water and whisk into oil. Taste and add more oyster sauce if preferred. Strain through a sieve and pour over warm beans immediately.
Scatter with chopped peanuts and serve warm or at room temperature.
