Talking tortilla

  • flour tortillas
  • good quality basil pesto
  • shredded spinach
  • 4
    slices lean bacon
  • 1
    avocado pear
  • red pimento peppadews or sun-dried tomatoes


Prepare all ingredients. Spray a non-stick pan with olive oil spray or use a little olive oil.
Heat pan and gently fry tortillas for about one minute per side - until brown spots begin to appear. Remove from pan.
Spread tortillas with a healthy layer of pesto and scatter in layers of the remaining ingredients.
Drizzle with olive oil and Balsamic vinegar.
Season and wrap - that's 'roll' to the uninitiated.
