Sweetcorn and vienna sausage pie

    self-raising flour

  • salt and cayenne pepper to taste

Preheat the oven to 180 ºC (350 ºF). Spray a deep 24 cm ovenproof dish with non-stick spray. Arrange the Vienna sausages in the prepared oven dish. Place the self-raising flour in a mixing bowl. Whisk the egg yolks and milk together and mix with the self-raising flour. Sauté the green pepper in a little oil till soft and add to the batter. Add the sweetcorn and mix. Season with salt and cayenne pepper. Beat the egg whites till soft peaks are formed and fold into the batter. Pour over the Vienna sausages and bake for 40 to 60 minutes or till the crust is done and brown on top. Serve with a salad. Serves 4.
