6.00 sweet corn — cobs, cooked
3.00 tomatoes — finely diced
2.00 avocado
1.00 carrots — finely chopped
0.00 lemon — juice only
3.00 olive oil

Method:

Cut the sweetcorn kernels off the cob and in a bowl, add all the vegetables together. Drizzle the olive oil and lemon juice over the vegetables and toss lightly.
