Sweet potato mash

  • 750
    orange sweet potatoes
  • 200
    piece of cabbage - shredded very thinly
  • 1
    spring onions - chopped
  • 30
  • Salt and white pepper to taste


Peel the sweet potatoes, slice them into even pieces and boil in salted water until tender.

Drain the sweet potatoes really well.

Mash half of the butter into the sweet potatoes and put aside.

Melt the remaining 15g of butter in a frying pan and stir fry the cabbage until soft, but don’t overcook it to give it a bit of a crunch.

Stir in the chopped spring onions.

Add to the sweet potatoes, and combine everything.

Season to taste.
