Sweet potato, ginger and almond salad

Ingredients (7)

1 sweet potatoes — peeled, chopped
15 ml fresh chillies — 573
5 ml ginger — ground
salt and freshly ground black pepper — to taste
salad greens — spinach or rocket or watercress
almonds — chopped
fresh chives — chopped, to garnish

Method:

Preheat the oven to 200ºC.

Arrange the chunks of sweet potato on an oven safe baking tray and drizzle with olive oil and sprinkle with ground ginger.  Season.

Roast the sweet potato until soft but firm. Remove from oven.
     
To serve your salad, simply arrange your greens in a salad bowl, top with roasted sweet potato and chopped almonds. 

Garnish with chopped chives and drizzle with dressing.
