Sweet and sour tofu

    egg noodles
  • 70
    sweet chilli sauce
  • 10
    hoisin wine
  • 50
    red wine
  • 5
    Thai spice

    x 297 g box tofu, cubed
  • 15
    peanut oil or sunflower oil
  • 8
    courgettes, sliced
  • 250
    frozen corn kernels


Prepare egg noodles according to pack instructions.
Mix chilli sauce, hoisin sauce, wine and spice together in a bowl.
Place the tofu in the marinade and coat well.
Allow to marinate for at least 30 minutes.
Heat the oil in a wok or large frying pan.
Fry the tofu in batches and keep warm.
Add the courgettes and corn kernels to the wok, toss to coat and cook for 30 seconds to one minute to heat through.
Season to taste and remove from the pan.
Stir the vegetables into the noodles.
Divide the noodles between four serving bowls and top with sweet and sour tofu.
