Sweet-chilli chicken balls

Chicken balls

    chicken breast fillets
  • 15
    sunflower oil
  • 2
    cloves garlic, crushed
  • 5
    grated fresh ginger
  • 1
    bunch chopped spring onions
  • 2
    large eggs
  • 30
    finely chopped fresh coriander or mint
  • 1
    grated zest of one lemon
  • 250
    fresh white breadcrumbs
  • 1
    bottle sweet-chilli sauce


Oven temperature: 200°C.
1. Place the chicken in a food processor and process until fine. Add the remaining ingredients, except the breadcrumbs and the chilli sauce, and blend. Season to taste with salt and stir in the breadcrumbs.

2. Roll the mixture into small balls and refrigerate for 30 minutes.

3. Drizzle a little extra sunflower oil into a roasting pan to grease it and place the balls in the pan. Roast in a preheated oven for 20 minutes, stirring once during the cooking time. Remove from the oven and add the sweet-chilli sauce. Stir well to coat.
