Sunday chicken

  • oil

    chicken pieces
  • salt and freshly ground black pepper

    thick white onion soup powder

    mango atchar

Preheat the oven to 180 ºC. Heat a medium-sized heavy-based pan and brush with a little oil. Season the chicken pieces with salt and pepper and fry skin side down until crisp and golden brown. Turn and brown on the other side. Remove the chicken pieces to an ovenproof dish. Dissolve the onion soup powder in 500 ml (2 c) water and mix in the mayonnaise and atchar. Pour over the chicken pieces and bake for about 40 minutes until done. Serve hot with rice and vegetables. Serves 6.
