Stuffed mushrooms

Stuffed mushrooms

  • 10
    large button mushrooms
  • 50
    olive oil
  • 20
    white wine vinegar
  • 1
  • freshly ground black pepper
  • 3
    Dijon mustard
  • 25
    basil pesto
  • 10
    black olives
  • 100
    feta cheese, crumbled
  • 10
    fresh basil leaves for garnishing


Carefully break the stems off the mushrooms and scoop out a little of the flesh with a melon baler.
Beat the olive oil, vinegar, salt, pepper and mustard together and marinate the mushrooms in it for three hours.
Drain the mushrooms. Mix the pesto, olives and feta, season with pepper and spoon a little of the mixture into each mushroom.
Serve each mushroom on a basil leaf.
