Strawberry cheesecake

    digestive biscuits, crushed

    butter, melted

    packet instant cheesecake mix


Make a biscuit base by mixing crushed biscuits with melted butter. Press evenly into base of a pie dish. Wash 500 g fresh strawberries well, set some aside for decoration and slice the rest. Make up cheesecake mixture according to instructions on box. Spread a third of cheesecake mixture over biscuit base and layer half the sliced strawberries on top. Repeat layers with another third of cheesecake mixture and remaining sliced strawberries and top with remaining cheesecake mixture. Decorate as desired with reserved whole strawberries. Refrigerate until ready to serve.
