Steak with mustard-glazed onions

  • butter and oil for frying
  • 3
    large onions, sliced
  • 4
    cloves garlic, sliced
  • 10
    mustard seeds
  • 1
    large sprig fresh rosemary, chopped
  • 15
    wholegrain mustard
  • salt and milled black pepper
  • 4
    sirloin or porterhouse steaks
  • 45
    port, marsala wine or sherry
  • milled pepper
  • mustard powder


Heat butter and oil and gently sauté onions, garlic and mustard seeds. When seeds begin to pop, add rosemary and wholegrain mustard. Simmer gently. Meanwhile, heat butter and oil in another pan, season steaks and fry to desired degree of doneness. Just before steaks are ready, increase heat under simmering onions, season and stir in port. Serve steaks topped with onion mixture and some juices from steak pan. TOTAL KILOJOULE COUNT: 12 530 kJ (2 995 Cal). A portion: 3 130 kJ (750 Cal).
