Steak with Madagascan green pepper sauce

  • 6
    sirloin steaks
  • 1
    Madagascan green peppercorns
  • 500
  • Seasoning
  • 1
    tot of sherry


20 mins
Pound half the green peppercorns in a pestle and mortar.
Season the steaks and rub with some of the green peppercorns.
Pan-fry in some butter in a pan until browned and medium rare.
Remove from the pan and add the rest of the peppercorns, cream and sherry to the pan juices.
Reduce for about 10 mins and season.
Serve with mash and greens.
