Spring onion frittata

    new potatoes
  • 30
    olive oil
  • 10
    large eggs
  • 12
    spring onions, sliced
  • 40
    Parmesan cheese, grated
  • 8
    basil leaves
  • salt and pepper
  • torn chives
  • 2
    tomatoes, peeled, seeded and chopped

1. Cook potatoes until just tender, drain and refresh in cold water. Peel and cube while still warm. 2. Preheat grill. Put a 22 cm greased frying pan over moderate heat. When hot, add olive oil. Beat four eggs in a bowl, pour into pan and swirl to cover the base. When just set, cover with potatoes and spring onions. Beat remaining eggs, adding 30 ml Parmesan cheese, basil and salt and pepper. Lower heat and cook for four minutes. Top with remaining cheese. 3. Transfer the pan to the grill and continue to cook under the grill, turning until just set. Slide out of the pan onto a board and slice. Garnish with chives and tomatoes and serve at room temperature.
