Spinach pesto

Vary the flavour of your pesto by using other herbs such as coriander, Italian parsley, origanum or even mint.

Ingredients (6)

3 handful spinach — shredded
1 handful fresh basil
2 cloves garlic — cloves
50 g cashew nuts — roasted
75 ml fresh chillies — 573
125 ml parmesan cheese — grated

Method:

Blend the spinach, basil, garlic and cashew nuts in a food processor until well combined.

Add the olive oil and Parmesan cheese and blend at a low speed.

Season to taste with salt and freshly ground black pepper and serve with crispy bread.
