Spicy roti sandwich

    Cheddar cheese, grated
  • 1
    chilli (or more if desired)
  • 1
    green pepper, seeded and chopped
  • 1
    can mushrooms, drained
  • 1
    small onion, finely sliced
  • 1
    (or more) tomatoes, finely sliced


12 minutes
Cover two of the rotis with grated cheese.
Top with remaining ingredients and season with salt and freshly ground black pepper.
Cover with remaining two rotis.
Place one stack in a non-stick pan and cook over medium heat for two to three minutes.
Turn and cook other side for two to three minutes until cheese has melted and rotis are golden.
Remove from the pan and cut into quarters or wedges.
Repeat with other roti stack.
Allow to cool, then pop into lunch boxes.
