Spaghetti Milanese

    uncooked spaghetti
  • 250
    bacon, chopped
  • 1
    onion, finely chopped
  • 200
    fresh button mushrooms, sliced
  • 100
  • half a can (425 g) tomato soup
  • salt and pepper
  • pinch of herbs

Cook the spaghetti in rapidly boiling salted water until soft. Drain well and set aside. Fry the bacon until crisp and set aside. Sauté the chopped onion in the bacon fat until soft. Add the mushrooms and fry until pale brown. Add the bacon and mix. Blend the cream and tomato soup and add to the bacon mixture. Add water if necessary and simmer until the sauce comes to the boil. Season to taste with salt, pepper and pinch of herbs. Spoon the sauce over the spaghetti and serve with a green salad. Serves 4.
