Smoorsnoek with vegetables

  • 1
    large onion, finely chopped
  • 1
    large tomato, peeled and finely chopped
  • 2
    potatoes, peeled and cubed
  • 250
    leftover cooked snoek, smoked if preferred
  • 250
    mixed vegetables
  • little lemon juice
  • salt and freshly ground black pepper


Sauté the onion in a little oil until tender. Add the tomato and simmer for a few minutes until soft. Add the potato, and simmer until done, adding a little water as needed. Add the snoek and vegetables and simmer until warmed through. Season with lemon juice and salt and pepper. Serve with rice and a salad if desired. Serves 4.
