Smoked chicken, apple and pecan nut salad with lemon mayonnaise

  • Lemon mayo :100 ml low-fat mayonnaise
  • 5
    grated lemon rind
  • 20
    chopped fresh parsley
  • 5
    salt and freshly ground black pepper to taste
  • Wraps: smoked chicken breasts, sliced diagonally

    Granny Smith apples, cored and cut into thin wedges
  • 12
    fresh Italian parsley
  • 1
    small handfull pecan nuts
  • 3


Lemon Mayonnaise Whisk together the ingredients in a mixing bowl.

Wraps Arrange the sliced chicken, apple wedges, pecan nuts, parsley and watercress in the middle of the tortillas. Drizzle with a little of the lemon mayonnaise and roll or fold up neatly.
