Smoked chicken and caprese tramezinni

  • 2 dozen
    mini pitas or tramezinnis
  • 500
    smoked chicken, cubed
  • 250
    rosa tomatoes, halved
  • 300
    grated mozarella
  • 100
    basil pesto
  • red, yellow and green peppers, cubed
  • salt
  • pepper
  • garlic (crushed)
  • green chilli (crushed)
  • olive oil

Braise the tomatoes and peppers in olive oil.
Add the garlic, chilli, basil pesto to taste and saute.
Remove from heat and add chicken, when completely cool add in the cheese.
Season with salt and pepper to taste.
Fill pitas/ tramezzinis and toast with garlic butter.
