    medium potatoes, cooked
  • 50
    ground almonds (optional)
  • 4
    cloves garlic, crushed
  • 1
    medium egg
  • salt to taste
  • 1
    lemon, juice
  • 100
    olive oil


Place potatoes in a food processor and purée until just smooth. Add almonds, garlic, egg and salt. Purée until smooth. Mix lemon juice and oil. Leaving motor running, pour in oil mixture in a thin stream until mixture is smooth but not too thick and sticky. Adjust seasoning, if necessary, and chill until needed. Makes 375 ml (1 1/2 cups).
