Sirloin with peppercorn crust

    sirloin roll
  • salt
  • 1
    grated rind of an orange
  • 430
    fresh breadcrumbs
  • 45
    multi-coloured peppercorns
  • 65


Preheat the oven to 160ºC. Place the meat on the rack of an oven roasting pan and oven-roast for 15-20 minutes per 500 g (rare) or 20-25 minutes per 500 g for medium. Remove from the oven, remove the string and trim the layer of fat. Season well with salt. Combine the remaining ingredients. Spread evenly on the outside of the roll. Return the roll to the oven and oven-roast for another 20 minutes or until the crust is slightly crisp. Leave the meat to rest in the warming drawer for about 10 minutes to make it easier to carve. Serve with a variety of vegetables. Serves 8.
