Shredded beef with ginger and garlic

  • 500
    beef fillet or rump
  • 30
    oyster sauce
  • 45
    light soy sauce
  • pinch sugar
  • salt and white pepper
  • oil for frying
  • 5
    cloves garlic
  • 5
  • 5
    cayenne chillies
  • handful each sugar snap peas, carrots, cut into strips, baby corn


7 minutes
Combine beef, sugar, oyster and soy sauce and season to taste. Set aside and allow to marinate for 30 minutes.
Heat oil in a large wok or non-stick pan and sauté garlic, ginger and chillies for a minute or two.
Add beef and vegetables and stir fry over high heat until cooked (about 5 minutes).
Serve hot on its own or with fragrant rice or boiled noodles.
