    cake flour

    baking powder

    extra-large eggs, whisked
  • 315
    iced water
  • oil for deep-fat frying
  • seasoning


Sift the cake flour, baking powder and salt together in a mixing bowl. Grate the margarine into the flour mixture and rub in until the mixture resembles fine breadcrumbs. Mix in the eggs and stir in just enough water to make a fairly stiff dough, almost like the dough for koeksisters. On a floured surface roll out the dough until 3-5 mm thick. Cut into strips 1 cm wide and 7 cm long. Heat the oil in a heavy-based saucepan and fry a few strips at a time until golden brown and cooked inside. Drain on paper towelling and sprinkle with seasoning. If preferred, dry the snacks in the oven at 100 ºC. Makes about 160 snacks.
