Sautéed spinach

  • 2
    bunches spinach, thoroughly rinsed, shredded and boiled till tender
  • 50
    olive oil
  • 1
    bay leaf
  • 4
    whole cloves garlic
  • salt and black pepper
  • 5
    grape vinegar
  • pinch nutmeg


Drain the spinach. Heat the olive oil along with the bay leaf. Add the garlic and stir-fry until golden brown. Remove the bay leaf and garlic. Add the spinach to the hot oil and stir-fry for 1 to 2 minutes. Season with salt and pepper. Add the vinegar and nutmeg and serve hot with Leg of lamb with flavoursome sauce (see recipe).
