Sautéed prawns on a basil mayonnaise

    medium-sized prawns
  • 1

    extra virgin olive oil
  • 1
    bunch basil
  • 50
    dry white wine
  • salt
  • lemon juice to taste
  • 12
    cocktail tomatoes
  • 4
    basil tips
  • 4
    nasturtium flowers


1. Peel and clean prawns and fry them in olive oil for approximately 1 minute. MAYONNAISE 2. Mix egg yolk with oil and a pinch of salt. Blend the basil and white wine until very fine. Mix basil paste with the egg and oil mixture, add lemon juice and salt. Spoon the mayonnaise onto the plates, place the prawns on the mayonnaise. GARNISH 3. Finish with basil tips, nasturtium flowers and cocktail tomatoes. Serves 4.
