Sausage and cheese loaf

  • 900
    pork sausages, casings removed
  • 150
    fresh white breadcrumbs
  • 2
    large spring onions, finely chopped
  • 375
    Cheddar cheese, grated
  • 2
    cloves garlic, crushed
  • 10
    Dijon mustard
  • 15
    fresh thyme, finely chopped
  • 2
    dry sage
  • 30
    parsley, finely chopped
  • 1
    extra-large egg, whisked

Preheat the oven to 160 ºC. Spray a 29 x 11 x -7 cm loaf tin with non-stick spray. Mix the sausage meat with the remaining ingredients except the egg. Add the egg and mix. Spoon the mixture into the prepared loaf tin, spread evenly and cover with aluminium foil. Bake for 45 minutes. Remove the aluminium foil and bake for another 45 minutes. Cool for 30 minutes. Drain the remaining liquid and turn out onto a serving platter. Serve with a salad. Serves 6.
