Samp and beans with vegetables

  • 1
    samp and bean mix, rinsed and soaked overnight
  • salt
  • 4
    carrots, scraped and sliced
  • 3
    potatoes, peeled and diced


Prepare the samp mixture as described in the basic recipe. Add the onion mixture, carrots and potatoes to the samp and beans when nearly soft. Season with nutmeg, salt and pepper. Serve hot with meat if desired. Serves 10-12.
