Salmon fish cakes with mock caviar

  • 250
    smoked salmon
  • 750
    mashed potato
  • 2
    medium eggs
  • 15
    horseradish cream
  • 30
    parsley, chopped
  • salt
  • freshly ground black pepper
  • oil for frying
  • mock caviar to serve


Mix all ingredients except oil and mock caviar. Shape mixture into 6 cakes and chill for 10 minutes. In a large frying pan, heat oil until hot. Fry fishcakes for 3-4 minutes on each side, or until golden brown. Top with mock caviar and serve with steamed fresh asparagus. Serves 6.
