Sago and coconut pudding

    tin coconut milk

  • fresh mango, sliced to serve
  • coconut, shaved and toated to serve


1. Heat the coconut milk and 350ml water in a saucepan. Bring to the boil, then add the rose-water, the sago and a pinch of salt. Reduce the heat and simmer for approximately 15 minutes or until cooked through.
2 Add the sugar and gently simmer, stirring continuously, until all the sugar has dissolved. 3 Spoon the pudding into six bowls and serve warm, topped with sliced mango and shaved-and-toasted coconut.
