Rusks with artichokes and feta

    extra virgin olive oil

  • Salt and freshly ground black pepper
  • 1
    packet mixed lettuce
  • 12
    slices French bread, toasted
  • 125
    feta, crumbled
  • 6
    marinated artichokes, halved
  • 30
  • More extra virgin olive oil, to drizzle
  • Extra black peppercorns


Whizz together oil, vinegar, salt and pepper.
Toss with salad leaves.
Lay out French bread 'rusks' on a serving platter and top with a few salad leaves, then pile feta, artichokes and capers on top.
Drizzle with a little olive oil and grind some black pepper over.
