Rösti with bacon and cherry tomatoes

  • 250 g bacon
  • 4 large potatoes, coarsely grated
  • 1 egg white, lightly beaten
  • 45 ml oil
  • 200 g cherry tomatoes
  • 200 g baby mushrooms
  • 2 spring onions, coarsely chopped


Cook bacon in its own fat until crisp.
Remove and keep warm.
Meanwhile, combine potato and egg white in a large bowl and divide into four portions.
Heat oil in a large, non-stick frying pan.
Cook one portion of potato mixture until browned and cooked through, forming into flat pancake shapes while cooking.
Repeat with remaining portions.
Cover rösti to keep warm.
Cook tomatoes, mushrooms and spring onions in same pan until just beginning to soften.
Serve rösti topped with bacon and tomato mixture.
